Our mission

Our mission is to make Japansese cuisine accessible to everyone. We often notice that our guests think that:

  1. Japanese cuisine is extremely difficult;
  2. Japanese cuisine is only for advanced cooks;
  3. Japanese cuisine takes a long time;
  4. Sushi rolling is extremely difficult.

  • With our 3,5 hour Japanese cooking class we want to show you that Japanese cuisine can be very accessible, even for novice cooks.
  • We are happy to show you how you can make miso, maki, temaki, nigiri, onigiri and sashimi in less than 2 hours.
  • By making use of ingredients that are available everywhere.

Japanese ingredients of the Japanese cooking class of Amsterdam Cooking Workshops on a black table

1. Key ingredients of Japanese cuisine

Authentic Japanese cooking starts with the right ingredients. However, you may find many variants and brands of certain ingredients in Asian supermarkets. We explain which ingredients and brands are best to use, and why we use them.

2. Fresh fish

Fresh 'sushi grade' fish is extremely important for good quality sushi and sashimi. Fish from the supermarket and often from your local fishmonger are unfortunately a no-go in most cases. We explain what 'sushi grade' fish means and where you can order the right quality of fresh fish.
